How to make it

  • Shred chicken into small bite-size pieces
  • Set aside
  • In a small skillet, melt butter and saute' onion until tender, about 5 minutes
  • Steam spinach (I steam in microwave with a little water)
  • Drain, reserving 1/2 cup of cooking liquid
  • Chop spinach coarsely (I use kitchen shears, and chop in bowl)
  • In large bowl, combine onion, spinach, sour cream, chiles, cumin, reserved spinach liquid and milk
  • Mix well, season to taste
  • Add *half* the sauce to the shredded chicken and mix well
  • Place the tortillas in oven to soften about 5 minutes
  • Fill the tortillas with equal amounts of filling, roll up
  • Place the rolled tortillas seam side down in one layer in a greased casserole (I use a 9 X 13 dish)
  • Cover with half the grated cheese and top with the remaining sauce
  • Sprinkle on remaining cheese
  • Bake at 350 degrees for 30 minutes

    Your green enchiladas sounds great. I made some just like this today but without the spinach and sour cream. I'm going to add those two next time I fix it. I've made it with chicken and beef. My husband likes mexican food. Thanks Darlin - just learning to cook - Elena
