Rockin Morrocan Stew

- 2 tsp olive oil shopping list
- 1 c. chopped onions shopping list
- 1/2 c each: diced celery and chopped green pepper shopping list
- 1 cup chopped mushrooms shopping list
- 3 cloves minced garlic shopping list
- 3 c chicken or vegetable broth shopping list
- 3 cups peeled, cubed sweet potatoes shopping list
- 1 can (19 oz) diced tomatoes shopping list
- 1 can (19 oz) chickpeas, drained and rinsed shopping list
- 1 tbsp lemon juice shopping list
- 2 tsp grated gingeroot shopping list
- 1 tsp each: cumin, curry, coriander & chili powder shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/4 c raisins (optional) shopping list
- 2 tbsp each: peanut butter and cilantro (optional) shopping list
How to make it
- Heat olive oil in a large, saucepan over medium high heat. Add onions, celery, gr pepper, mushrooms and garlic.
- Cook and stir until veggies begin to soften about 3 minutes.
- Add remaining ingredients, except raisins, p. butter and cilantro.
- Bring to a boil. Reduce heat to low and simmer, covered for 20 minutes or until sweet potato is tender.
- Stir in raisins, p. butter and cilantro. Mix well. Simmer for 5 more minutes.
- ENJOY!
