Beef Stew For Two Recipe

How to make it

  • Dissolve the ½ pack Lipton Onion soup mix into the cup of water.
  • Preheat the oven to 325 deg.
  • Combine all of the ingredients, except the meat, into the Dutch oven.
  • Mix and dissolve well then add the meat.
  • Mix well again and bake covered for 1 hour.
  • Remove from oven, stir well and bake covered for an additional hour.
  • Remove and serve over white rice.
  • Enjoy
  • Note:
  • If corn or peas are desired, open can, drain, add to pot, mix well and cook (covered) for 15 minutes longer (or until vegetable is warm).

    I am always looking for smaller-sized recipes for my husband and I, because if I cook like I usually would, I always seem to make enough for 6 people. I have to laugh in spite of myself, because I came from a large family and I learned to cook for them, so it's hard to scale it down. I'm always asking myself, "Is this going to make enough?" Probably when we have kids I'll have finally learned how to cook for two and have to re-train myself again. Thanks for sharing this nice beef stew recipe. I love using that onion soup mix in recipes. It adds such a rich flavor. You could easily add Veg-All or frozen mixed veggies, too. Great post! - Natalie
