Grilled Chicken Cordon Bleu Recipe
This is a nice summer alternative when you don't want the oven heating up your kitchen. I have made this over both coals and on a gas grill. I believe I got this from "Taste of Home" magazine.

Ingredients
  • 6 boneless, skinless chicken breasts
  • 6 slices Swiss cheese
  • 6 slices thin slices of deli ham
  • 3 Tbs olive oil or vegetable oil
  • 3/4 cup seasoned bread crumbs

Directions
  1. Flatten the chicken to 1/4" thickness. Place a slice of cheese and ham on each to within 1/4" of edges. Fold in half; secure with thin, metal skewers or toothpicks. Brush with oil and roll in bread crumbs. Grill, covered, over medium-high heat for 15 to 18 minutes, or until juices run clear.

Frankie I make the Chicken Cordon Blue also... I really love this recipe...I learned to make this from going to Germany... They serve it alot over there..The only difference is I slice my chicken and add the meat and cheese inside...I accidently rated this a 3...I meant to do it as a 5

We enjoyed this very much, had it with pleclare's zucchini Parmesan and I had made potato salad.

BTW, I tied the rolls with kitchen string and grilled them....made them easier to turn on the grill. Thanks for the recipe!!!!
