Ingredients
  • Strudel: ----------
  • 1 Tbsp unsalted butter
  • 1 medium onion, chopped
  • ½ pound mushrooms, sliced
  • 2 pounds cooked shrimp, scallops, crab, or lobster – Chunked (do this in any combination based on availability or your tastes: recommend ¼ pound of each)
  • 1 pound white fish,(or a non-oily fish) sautéed & flaked
  • 1 Tbsp parsley, chopped
  • 1 cup ricotta cheese
  • 2 eggs, beaten
  • Salt and pepper -- to taste
  • 8 sheets Phyllo dough
  • 8 Tbsp unsalted butter, melted
  • Lemony Cream Sauce: -----------
  • ½ Cup Good white wine
  • 2 (+) Tbsp lemon juice
  • 1 pint heavy cream
  • Salt and pepper

Directions
  1. Melt butter in a Dutch oven and sauté/sweat onion and mushrooms until all liquid is gone. Add shellfish and fish and stir until well combined.
  2. Remove from heat and add parsley, ricotta, eggs, salt, and pepper and mix well.
  3. Preheat oven to 400F
  4. Butter a large baking sheet (use a nonstick one?).
  5. Place 2 sheets of phyllo pastry on the baking sheet and cover the rest with a damp cloth to prevent drying while making each pastry. Brush one pastry lightly with melted butter out to edges Spoon seafood mixture in a long even shape down center of pastry; carefully fold pastry and roll into a strudel. Tuck ends under and brush with butter.
  6. Repeat with the remaining phyllo sheets.
  7. Reduce oven heat to 375F and bake strudel for 30 minutes, until top is browned. Brush top with butter twice during baking.
  8. Cool slightly, slice, and serve with Lemony Cream Sauce.
