- 1 small shallot, minced shopping list
- 2 tblsp pine nuts shopping list
- 2 pints grape tomatoes (4 cups) shopping list
- small black and green olives to taste shopping list
- 2 tablespoons chopped fresh cilantro shopping list
- kosher salt and ground pepper shopping list
How to make it
- In a large skillet, heat oil over medium-low heat.
- Cook shallot, pine nuts stirring often, about 5 minutes or until pine nuts are a little crispy and shallot is soft'.
- Add tomatoes .
- Bring to a simmer; cook, covered, 5 minutes.
- Add a bit of water as needed.
- Uncover, add olives and raise heat to medium-high; cook, tossing often, until tomatoes have softened and added water has evaporated, about 3 minutes.
- Stir in cilantro.
- Season with kosher salt and pepper; toss to combine.
