How to make it

  • In a large skillet, heat oil over medium-low heat.
  • Cook shallot, pine nuts stirring often, about 5 minutes or until pine nuts are a little crispy and shallot is soft'.
  • Add tomatoes .
  • Bring to a simmer; cook, covered, 5 minutes.
  • Add a bit of water as needed.
  • Uncover, add olives and raise heat to medium-high; cook, tossing often, until tomatoes have softened and added water has evaporated, about 3 minutes.
  • Stir in cilantro.
  • Season with kosher salt and pepper; toss to combine.
