Uncle Steves Perfect Caesar Salad

- 1 lg or 2 small heads romaine lettuce shopping list
- 1 lg clove garlic, cut in half shopping list
- 1 anchovy shopping list
- juice of 1/2 lemon shopping list
- 1/2 tsp worcestershire sauce shopping list
- 1/2 tsp Tabasco sauce shopping list
- 2 T wine vinegar shopping list
- 1 egg shopping list
- 1/2 cup olive oil shopping list
- 1 heaping tsp Dijon mustard shopping list
- 1 c coarsely grated romano or parmesan shopping list
- 2 c croutons shopping list
How to make it
- Rub a large (pref wooden) salad bowl with the garlic clove's cut side
- Wash lettuce, dry well and tear into pieces into the bowl
- In a separate, small bowl, mash or chop anchovy
- Add lemon juice, Worcestershire, tabasco, wine vinegar, egg, olive oil, and mustard.
- Whisk well, pour on lettuce and toss
- Add cheese and croutons and toss again
- Serve immediately
- It's fun to do this at the table, tossing after each addition to the salad. Also, make sure the egg is fresh and has no crack where bacteria could get in. If you want, boil it for 1-2 minutes to be safe.
