Indian-spiced Braised Chicken

- 11/2lbs boneless,skinless chicken breasts shopping list
- 1 medium onion,halved and thinly sliced shopping list
- 1 can(14.5oz.) diced tomatoes,drained shopping list
- 2Tbs. tomato paste shopping list
- 1Tbs. grated ginger(from a 1" piece) shopping list
- 2 garlic cloves,minced shopping list
- 1/2tsp ground coriander shopping list
- 1/4tsp cayenne pepper shopping list
- coarse salt and ground pepper shopping list
- 1/2c plain yogurt shopping list
- 1/4c chopped fresh cilantro shopping list
- 1/2tsp garam masala(optional) shopping list
- cooked white rice,for serving shopping list
How to make it
- In a 5 or 6 qt. slow cooker,stir together chicken,onion,tomatoes,tomato paste,ginger,garlic,coriander,and cayenne;season with salt and pepper.
- Cook on high 4hours(or on low,8 hours) until fork tender. Stir in yogurt and cilantro and,if using garam masala. Serve with rice.
- Oven method: Preheat oven to 350. Follow step 1,using a 5 qt. lidded heavy pot. Stir in 2 cups of water. Cover;bake until tender,about 2 hours. Stir in yogurt,cilantro,and if using,garam masala
