Indian-spiced Braised Chicken Recipe
Indian inspired chicken dish that can be slow cooked or done in the oven.

Ingredients
  • 11/2lbs boneless,skinless chicken breasts
  • 1 medium onion,halved and thinly sliced
  • 1 can(14.5oz.) diced tomatoes,drained
  • 2Tbs. tomato paste
  • 1Tbs. grated ginger(from a 1" piece)
  • 2 garlic cloves,minced
  • 1/2tsp ground coriander
  • 1/4tsp cayenne pepper
  • coarse salt and ground pepper
  • 1/2c plain yogurt
  • 1/4c chopped fresh cilantro
  • 1/2tsp garam masala(optional)
  • cooked white rice,for serving

Directions
  1. In a 5 or 6 qt. slow cooker,stir together chicken,onion,tomatoes,tomato paste,ginger,garlic,coriander,and cayenne;season with salt and pepper.
  2. Cook on high 4hours(or on low,8 hours) until fork tender. Stir in yogurt and cilantro and,if using garam masala. Serve with rice.
  3. Oven method: Preheat oven to 350. Follow step 1,using a 5 qt. lidded heavy pot. Stir in 2 cups of water. Cover;bake until tender,about 2 hours. Stir in yogurt,cilantro,and if using,garam masala
