Ingredients
  • 2 eggplants, diced
  • 1 onion, chopped
  • 2 cups raw shrimp
  • 1 stalk of celery, chopped
  • 2 tbs. of butter
  • salt, pepper, and creole seasoning to taste
  • about 6 saltine crackers, crushed

Directions
  1. Peel and dice eggplant
  2. Boil eggplant until soft (about 15 mins.) in salted water
  3. Saute onion and celery for about 5 mins. in butter
  4. add shrimp and cook another 2-3 mins
  5. Combine with eggplant
  6. Season to taste
  7. Put in baking dish
  8. Sprinkle with crushed cracker crumbs
  9. Bake 30 mins at 350
