Eggplant Casserole Recipe

It can serve 6 but you will want to eat the whole thing yourself! It's that good!!!!!

Ingredients
- 2 eggplants, diced
- 1 onion, chopped
- 2 cups raw shrimp
- 1 stalk of celery, chopped
- 2 tbs. of butter
- salt, pepper, and creole seasoning to taste
- about 6 saltine crackers, crushed
Directions
- Peel and dice eggplant
- Boil eggplant until soft (about 15 mins.) in salted water
- Saute onion and celery for about 5 mins. in butter
- add shrimp and cook another 2-3 mins
- Combine with eggplant
- Season to taste
- Put in baking dish
- Sprinkle with crushed cracker crumbs
- Bake 30 mins at 350
