Holiday Potatoes Recipe

Ingredients

3 pounds potatoes, peeled and cubed (I prefer to use a combination of red and white potatoes)

1/4 cup onions, chopped

8 ounces cream cheese, cubed

1/4 cup butter, softened

1/2 cup milk

2 eggs, beaten

1 tsp salt

fresh chives, chopped

Directions

Cook potatoes and onion in boiling water until tender, drain.

Add cream cheese, butter, and milk.

Beat until combined with a mixer and add eggs and salt.

Continue to mix until potatoes are fluffy.

Pour into greased casserole dish, top with chopped fresh chives

Bake 45 minutes at 350 degrees.
