How to make it

  • Cook potatoes and onion in boiling water until tender, drain.
  • Add cream cheese, butter, and milk.
  • Beat until combined with a mixer and add eggs and salt.
  • Continue to mix until potatoes are fluffy.
  • Pour into greased casserole dish, top with chopped fresh chives
  • Bake 45 minutes at 350 degrees.
