How to make it

  • combine bread crumbs,1/2 cup of cornstarch and coconut in a small bowl-set aside
  • combine 1 cup of colada mix,powdered sugar and rum in another bowl and set aside
  • place remaining cornstarch in a small bowl
  • coat shrimp in cornstarch,dip in colada mixture,then in coconut mixture ,back into colada then coconut
  • carefully drop each shrimp into 375* F. oil
  • fry until golden brown.

  • mix sour cream and pineapple
  • serve as a dip for shrimp
