Ingredients
  • times are aproxamate-acording to size of shrimp,ect.

  • 2 cups bread crumbs
  • 1 1/2 cups corn starch-divided
  • 2 cups sweetened coconut flakes
  • 1 1/2 cups pina colada drink mix-devided
  • 2 TBS. powder sugar
  • 1/3 cup captain morgan spiced rum
  • 1# of large,uncooked,shrimp-peeled and butterflied
  • vegetable for frying

  • SAUCE FOR DIPPING
  • 1/3 cup sour cream
  • 1/3 cup canned crushed pineapple,drained

Directions
  1. combine bread crumbs,1/2 cup of cornstarch and coconut in a small bowl-set aside
  2. combine 1 cup of colada mix,powdered sugar and rum in another bowl and set aside
  3. place remaining cornstarch in a small bowl
  4. coat shrimp in cornstarch,dip in colada mixture,then in coconut mixture ,back into colada then coconut
  5. carefully drop each shrimp into 375* F. oil
  6. fry until golden brown.

  10. mix sour cream and pineapple
  11. serve as a dip for shrimp
