The recipe is from The Fireside Restaurant and Playhouse in Fort Atkinson WI. This stuff is out of this world. They are known for their wonderful food and very well done plays and musicals.

Ingredients
  • 4 pounds peeled sweet potatoes, steamed and pureed
  • 2/3 cup melted butter
  • 1 1/4 cup evaporated milk
  • 1/2 teaspoon salt
  • 7 eggs
  • 2 cups sugar
  • Pecan Topping
  • 1/4 cup flour
  • 1/2 cup brown sugar
  • 2 Tablespoons melted butter
  • 1/4 cup pecan pieces

Directions
  1. Place sweet potatoes in large mixing bowl, whip until smooth.
  2. Add butter, eggs and evaporated milk, mix thoroughly, add sugar and salt.Mix thoroughly again.
  3. Put into a 9 x 13 pan and top with pecan topping.
  4. Bake at 300 for 1 1/2 hours.
  5. To make pecan topping, mix flour, butter and brown sugar until it's the consistency of sand. Add pecan pieces, mix thoroughly.
