Lemon Whiskey Cake

- Zest of 1 lemon shopping list
- 1/4 C Irish whiskey, Jamesons or Bushmill if you have it shopping list
- 1 1/2 sticks of butter, room temperature shopping list
- 3/4 c sugar shopping list
- 3 eggs, beaten shopping list
- 2 C flour shopping list
- pinch of salt shopping list
- 3/4 C almonds, ground shopping list
How to make it
- Day Before - Zest lemon and cut into julienne strips, soak overnight in the whiskey
- Next Day - Preheat oven to 350 and generously grease a 9 inch round pan
- In a medium bowl, cream the butter and sugar until light and fluffy
- whisk in eggs
- Sift in flour and salt and stir to blend
- Fold in the almonds
- Strain the whiskey, discarding zest and stir the whiskey into the batter
- Pour into the prepared pan and bake until cake is golden and a toothpick inserted in center comes out clean, about an hour.
- Cool on wire rack, dust with confectioner's sugar to serve.
