How to make it

  • Day Before - Zest lemon and cut into julienne strips, soak overnight in the whiskey
  • Next Day - Preheat oven to 350 and generously grease a 9 inch round pan
  • In a medium bowl, cream the butter and sugar until light and fluffy
  • whisk in eggs
  • Sift in flour and salt and stir to blend
  • Fold in the almonds
  • Strain the whiskey, discarding zest and stir the whiskey into the batter
  • Pour into the prepared pan and bake until cake is golden and a toothpick inserted in center comes out clean, about an hour.
  • Cool on wire rack, dust with confectioner's sugar to serve.
