Lemon Whiskey Cake Recipe

A no frosting required, delicately flavored cake.
Place a paper doily over the tiop and sift some confectioner's sugar on to finish

Ingredients
- Zest of 1 lemon
- 1/4 C Irish Whiskey, Jamesons or Bushmill if you have it
- 1 1/2 sticks of butter, room temperature
- 3/4 c sugar
- 3 eggs, beaten
- 2 C flour
- pinch of salt
- 3/4 C almonds, ground
Directions
- Day Before - Zest lemon and cut into julienne strips, soak overnight in the whiskey
- Next Day - Preheat oven to 350 and generously grease a 9 inch round pan
- In a medium bowl, cream the butter and sugar until light and fluffy
- whisk in eggs
- Sift in flour and salt and stir to blend
- Fold in the almonds
- Strain the whiskey, discarding zest and stir the whiskey into the batter
- Pour into the prepared pan and bake until cake is golden and a toothpick inserted in center comes out clean, about an hour.
- Cool on wire rack, dust with confectioner's sugar to serve.
