Scallops sauteed in vanilla, finished with rum

Ingredients
  • 6 to 7 scallops depending on size
  • key lime pepper
  • 2 tlbs butter
  • 3 tbls vanilla paste
  • dark rum (to taste)

Directions
  1. bring saute pan to heat
  2. melt butter
  3. dry and add scallops to pan
  4. season with pepper
  5. sear on one side
  6. add vanilla paste
  7. sear other side
  8. flame off with dark rum
  9. Serve on baby greens

I have used vanilla in a wonderful lamb demi glacs reduction but never on scallops, gr8t idea TY.
