Ingredients
  • 1 cup olive oil for frying
  • 1 large potato, thinly sliced
  • 1 1/2 pounds ground beef, thawed
  • 1/2 white onion, diced
  • 1/2 white onion, sliced
  • 3 cloves garlic, minced
  • 1/2 bunch of fresh parsley, chopped
  • 1 1/2 teaspoons all spice
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons black pepper
  • 1 1/2 teaspoons ground nutmeg
  • 1 1/2 teaspoons cumin
  • 1 large tomato, thinly sliced
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 2 cups long grain white rice
  • 4 cups water
  • * You may subsitute your favorite Arabic spice mix for spices listed above

Directions
  1. Preheat the oven to 350 degrees F (175 degrees C)
  2. Heat oil in skillet on medium-high heat
  3. Once hot, fry potato slices until just golden then remove and set aside on paper towel
  4. In medium bowl, mix together the beef, diced onion, garlic, fresh parsley, spices, lemon juice and 1/2 cup of olive oil
  5. Press mix flat into 7x11 or medium sized baking dish
  6. Place potato slices over meat, then tomato slices over potatoes and top with the sliced onion
  7. Cover with aluminum foil and bake for 45 minutes, remove the aluminum foil and bake another 15 minutes
  8. While Kifta is cooking, cook rice until tender
  9. Cut Kifta into squares and serve over a bed of rice rice
