Horchata

- 1 c. white rice, rinsed, drained shopping list
- 1 3” cinnamon stick shopping list
- 4 c. hot water shopping list
- ¾ c. granulated sugar shopping list
- 1 (12 oz) can evaporated milk shopping list
- ice cubes shopping list
- Pinch of ground cinnamon shopping list
- lime rind strips shopping list
How to make it
- Combine rice, cinnamon stick and water in a large bowl; cool. Cover and refrigerate for at least 2 hours, preferably overnight.
- Remove cinnamon stick. Spoon rice into a blender container (reserve soaking water). Cover; blend on High for 3-4 minutes until mixture is as smooth as possible. Add the reserved soaking water and sugar; blend for an additional 2 minutes. Strain the mixture through a cheesecloth or fine sieve into a pitcher, pressing the rice solids until only a dry paste remains; discard paste. Stir evaporated milk into the mixture.
- To serve: Pour into tall glasses with ice cubes sweeten with additional sugar, if desired. Sprinkle with cinnamon. Garnish with lime rind.

If anyone hasn't tried horchata before, you really don't konw what you're missing. It's amazing. There are lots of variations you can try, but Coffeebean really put up an authentic recipe.

Yay! A really good, easy Horchata recipe!! I bet using evaporateed milk makes it much richer. Can't wait to try it!
