A delicious traditional Mexican drink. I love this beverage.

Ingredients
  • 1 c. white rice, rinsed, drained
  • 1 3” cinnamon stick
  • 4 c. hot water
  • ¾ c. granulated sugar
  • 1 (12 oz) can evaporated milk
  • Ice cubes
  • Pinch of ground cinnamon
  • Lime rind strips

Directions
  1. Combine rice, cinnamon stick and water in a large bowl; cool. Cover and refrigerate for at least 2 hours, preferably overnight.
  2. Remove cinnamon stick. Spoon rice into a blender container (reserve soaking water). Cover; blend on High for 3-4 minutes until mixture is as smooth as possible. Add the reserved soaking water and sugar; blend for an additional 2 minutes. Strain the mixture through a cheesecloth or fine sieve into a pitcher, pressing the rice solids until only a dry paste remains; discard paste. Stir evaporated milk into the mixture.
  3. To serve: Pour into tall glasses with ice cubes sweeten with additional sugar, if desired. Sprinkle with cinnamon. Garnish with lime rind.

Coffee, I have never heard of this before. It looks so interesting, I think I will try it. One question though, you don't cook the rice first?


Bean....can I use a food mill instead of cheesecloth? Sounds really good!

If anyone hasn't tried horchata before, you really don't konw what you're missing. It's amazing. There are lots of variations you can try, but Coffeebean really put up an authentic recipe.

Alterations


Vanilla or almaretto adds a wonderful flavor. Also if you chill to just shy of frozen, it tastes like a unique kind of sorbet. I've actually cheated and used raw minute rice, soaked 2 hours. It's easier to blend.
