How to make it

  • BATTER REMINDER: DO NOT USE A MIXER. MIX BY HAND
  • BEAT EGGS AND THEN GRADUALLY ADD SUGAR. MIX WELL
  • ADD MILK, MIX WELL
  • ADD OIL, MIX WELL
  • ADD FLOUR A LITTLE AT A TIME AND MIX WELL
  • ADD COCONUT FLAVOR AND COCONUT, MIX WELL
  • MAKE SURE ALL INGREDIENTS ARE MIXED REALLY WELL.
  • POUR INTO A GREASED BUNDT PAN.
  • BAKE AT 350 DEGREES FOR 45 MINUTES
  • ICING:
  • 1/2 CUP WATER
  • 1 CUP SUGAR
  • 1 TEASPOON OF COCONUT FLAVOR
  • BRING TO A BOIL, BOIL FOR ONE MINUTE. SPOON OVER CAKE WHEN DONE

    I tried it last night for my hubby's friends; we came back home with an empty cake carrier. In a couple of minutes I will be making it again. However, I changed the recipe a little bit:
    used less sugar (1 1/2) cup, Oil (3/4) cup, and coconut (1/3). I also added some vanilla extract. And instead of buttermilk I used 1 cup of non-fat yogurt.
