Ingredients

1 1/2 - 2 lbs boneless, skinless chicken breast halves

2 tablespoons extra virgin olive oil

1 can Campbell's Healthy Request cream of chicken soup

2 cans of veggies or equivalent amount of fresh veggies (2 different kinds)

1/4 cup white zinfandel (or preferred white whine)*

salt and ground pepper (to taste)

*Chicken broth can be substituted for wine

Directions

In a small bowl, mix the soup, wine, salt and pepper. Set aside.

Heat oil in frying pan over medium heat until "rippled"

Sear the breasts for 6 minutes on each side. (Yes, I know we did not season them)

Add soup mixture and veggies to pan.

Cover and simmer over low heat for 40 minutes (or until chicken is cooked)

Serve.

**I serve this dish with rice and a nice crusty bread (for dipping).**
