How to make it

  • For Mariande, combine dressing, garlic , oregano and black pepper in a small bowl.
  • Place steak and marinade in a plastic bag, turning to coat all sides.
  • marinate in refrigerator 6-8 hours or overnight.
  • Quarter artichoke hearts, and cut tomatoes into wedges, slice onions into thin wedges, slice the olives.
  • Remove steak from marinade, grill 17 to 21 mins. until steak is med-rare. Carve steak diagonally across the grain into thin slices.
  • Arrange lettuce on large serving platter, top with steak slices, artichokes, tomatoes, cucumber, onion and olives. Top with feta cheese. drizzle with dressing
  • Pita bread wedges goes well with this salad.

    All my favorite ingredients artichoke hearts,plum tomatoes,red onion, pitted ripe olives , crumbled feta cheese make this dish well rounded flavor wise and complete nutrition wise. I will easily be able to convert this to a vegetarian meal using Baked Savory Style Tofu.
