Ingredients
  • 3 Tbsp Cinnamon, ground
  • 6 Star Anise or 2 tsp Anise seed
  • 1 1/2 tsp Fennel seed
  • 1 1/2 tsp Sechuan Pepper or whole black pepper corns
  • 3/4 tsp ground cloves

Directions
  1. Combine all ingredients in a blender. I find a small grinder works better than a blender, but I still prefer to use a mortar and pestal. Blend and pulse until reduced to a fine powder.. Store covered tightly in a cool dark place for up to 6 months.
  2. Makes 1/3 cup.

Alterations


Hi Deedeec, if you add black caraway seeds, nutmeg, mace, cardamom, cumin seeds and omit fennel seeds you would get garam masala.
