How to make it

  • In large saucepan over very low heat melt chocolate.
  • Add butter then stir until melted and remove from heat.
  • In large bowl combine egg yolks, brown sugar and white sugar then stir until well mixed.
  • Add chocolate and stir well until combined.
  • In small bowl combine almonds, flour and cornmeal then stir until well mixed.
  • Pour into chocolate and stir until combined.
  • In large bowl with electric mixer beat egg whites with cream of tartar until they form stiff peaks.
  • Fold egg whites into chocolate in three batches.
  • Bake in a buttered floured springform pan for 5 minutes at 400.
  • Reduce heat to 350 and bake another 25 minutes.
  • Let cool completely before removing from pan.

    What goes on? I started to make this chocolate polenta cake yesterday, then realised the recipe does not include any polenta!!
