A great recipe for Cacciatore with lots of flavor. Serve with a side of rice or pasta. A delicious way to serve chicken.

Ingredients
  • Flour (for coating chicken)
  • 8 Chicken pieces (cut breasts to half size)
  • 3/4 Cup Olive Oil
  • 6 Garlic Cloves
  • 10 White Mushrooms, sliced
  • 1 Onion, peeled and sliced
  • 2 Green Bell Peppers, cored & seeded & sliced into 1/2 strips
  • 2 Red Bell Peppers, cored & seeded & sliced into 1/2 strips
  • 1 Cup Dry White Wine
  • 1 16 oz Can Chicken Broth
  • 1 28 oz can whole tomatoes, with juice, crushed
  • 1 teaspoon Crushed Red Pepper
  • Kosher Salt
  • 1 teaspoon Dried Oregano
  • 3 Tablespoons Tomato Paste
  • 2 Tablespoons Worchestershire Sauce
  • 6 Leaves Fresh Basil, chopped

Directions
  1. Put flour in a dish and coat the chicken pieces & shake off excess.
  2. Heat oil in large saucepan over medium-high heat.
  3. Add chicken in batches and fry until golden brown on all sides.
  4. When chicken is cooked, remove from pan and set aside.
  5. Add garlic to pan and cook until it is golden brown.
  6. Add mushrooms and saute for 5 minutes.
  7. Add onion and bell ppeppers and saute until the vegetables are soft, about 6-7 minutes.
  8. Add wine and let reduce for 1 minute.
  9. Add chicken broth, tomatoes, crushed red pepper, salt to tase, oregano, Worchestershire sauce and tomato paste.
  10. Return chicken to the pot and bring the liquid to a boil, stirring constantly.
  11. Turn down heat and simmer for 40 minutes.
  12. Stir in fresh basil just before serving.
  13. Serve with rice or pasta.
