Ingredients
  • 1/4 tsp black pepper
  • 1-1/2 tsp fresh thyme, chopped
  • 1 pound green beans, trimmed
  • 1 cup chopped celery
  • 4 scallions, thinly sliced
  • 2 large tomatoes, chopped

Directions
  1. Prepare green beans by cutting off tips and cutting into 2-inch (5 cm)pieces.
  2. Place green beans in a medium sauce pan, add ground pepper and enough water to cover green beans.
  3. Over high heat, bring water to a boil, cover and reduce heat to simmer for 10 minutes.
  4. Add tomatoes, celery, thyme, and scallions to saucepan and simmer an additional 10 minutes, until the green beans and celery are tender.

Yes, love the herbs with the string beans. i have an even simpler, similar variety. put some butter in a saucepan, sautée scallions and some garlic, as well as herbs.place chopped tomatoes on top, then string beans.add some salt and pepper. reduce heat, cover, simmer until beans are tender. same ingredients as yours, just cooked differently. does taste good. you may want to chop some smoked ham and sautée with the scallions and garlic. makes a full meal for me.
