Scalloped Salmon Recipe
This is an old recipe I found in one of my cookbooks... I havent tried it yet but plan to in the near future... It really sounded good

Ingredients
  • 1/2 cup chicken broth
  • 2 eggs, slightly beaten
  • 1 tablespoon minced onion
  • 1 (16oz) can salmon, drained
  • 2 cups seaspned stuffing croutons
  • 2 tablespoons parsley flakes
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup cheddar cheese, grated
  • 1//2 cup milk
  • 1 recipe vegetable sauce
  • Vegetable Sauce:
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • Dash of pepper
  • 1 cup milk
  • 1 cup green peas

Directions
  1. Combine chicken broth with eggs, milk, parsley, onion, mustard, salt and pepper.
  2. Stir in salmon, croutons and cheese.
  3. Turn into a 9 inch pie pan.
  4. Bake unclovered at 350 degrees for about 30 to 40 minutes
  5. Serve with Vegetable Sauce.

  7. Cook until bubbly in a saucepan. Cook 2 minutes more: add 1 cup green peas on top...

I made this using Stove Top turkey stuffing because that's what I had handy, and therefore I didn't use chicken broth, just water. The stuffing herbs overpowered the salmon when it was first cooked, but the next day it was very good cold.
