Egg Drop Soup Recipe
This is a favorite soup of mine which is so quick to make. It's great as an appetizer before another substantial dish.

Ingredients
  • 3 cups of homemade chicken broth
  • 2 teaspoons of cornstarch
  • 2 tablespoons cold water
  • 1 scallion, including some of the green part, cut into 1/4 inch pieces
  • 1 egg, well beaten
  • freshly ground pepper

Directions
  1. Bring the broth to a boil.
  2. Blend the cornstarch and water.
  3. Add to the broth slowly, stirring.
  4. When thickened, add the scallion.
  5. Stirring the soup rapidly, gradually add the beaten egg.
  6. Remove from the heat immediately and season with pepper.

Yup....good job...this is the way I was taught by a chinese restauranteur to make it...they added a little soy sauce and sesame oil to the broth too...not much, just to taste...

Alterations


Due to my cold, I added 1 fresh sliced jalepeno pepper, garlic clove, and red hot chili flakes...to help clear up the sinuses...did the job...adn the added spice really went a long way!
