Ingredients
  • 2T. olive oil
  • 4 bonless skinless chicken breasts
  • 1 med, onion finely minced
  • 4 large cloves garlic
  • 1c chicken stock
  • 1 jar roasted red peppers
  • 2 cans cannellini beans (drained and rinsed)
  • salt and pepper to taste
  • juice and zest of one large lemon
  • 2t. hot pepper sauce
  • 1/4c. parmesan cheese (grated) more if you like

Directions
  1. Preheat oven to 350
  2. Heat olive oil in a large oven proof skillet ( not nonstick)
  3. Salt and pepper chicken
  4. Brown chicken on both sides
  5. Add onion to pan cook till translucent
  6. Add garlic cook 2min.
  7. Add chicken stock, roasted peppers, beans, salt, pepper, hot pepper sauce
  8. Bring to a boil
  9. Place in oven for 15-20 min.
  10. Remove from oven and add lemon juice and zest
  11. Sprinkle with parmesan cheese
  12. Serve with a nice crusty bread to soak up the juices
