Roasted Red Pepper And Lemon Chicken With Shallots And Cannellini Beans

- 2T. olive oil shopping list
- 4 bonless skinless chicken breasts shopping list
- 1 med, onion finely minced shopping list
- 4 large cloves garlic shopping list
- 1c chicken stock shopping list
- 1 jar roasted red peppers shopping list
- 2 cans cannellini beans (drained and rinsed) shopping list
- salt and pepper to taste shopping list
- juice and zest of one large lemon shopping list
- 2t. hot pepper sauce shopping list
- 1/4c. parmesan cheese (grated) more if you like shopping list
How to make it
- Preheat oven to 350
- Heat olive oil in a large oven proof skillet ( not nonstick)
- Salt and pepper chicken
- Brown chicken on both sides
- Add onion to pan cook till translucent
- Add garlic cook 2min.
- Add chicken stock, roasted peppers, beans, salt, pepper, hot pepper sauce
- Bring to a boil
- Place in oven for 15-20 min.
- Remove from oven and add lemon juice and zest
- Sprinkle with parmesan cheese
- Serve with a nice crusty bread to soak up the juices
