How to make it

  • Preheat oven to 350
  • Heat olive oil in a large oven proof skillet ( not nonstick)
  • Salt and pepper chicken
  • Brown chicken on both sides
  • Add onion to pan cook till translucent
  • Add garlic cook 2min.
  • Add chicken stock, roasted peppers, beans, salt, pepper, hot pepper sauce
  • Bring to a boil
  • Place in oven for 15-20 min.
  • Remove from oven and add lemon juice and zest
  • Sprinkle with parmesan cheese
  • Serve with a nice crusty bread to soak up the juices
