Lemon Filled Cake With Coconut Frosting

- White cake shopping list
- 3 c flour shopping list
- 1 c Crisco shopping list
- 1 tsp vanilla shopping list
- 1 tsp salt shopping list
- 2 c sugar shopping list
- 1 1/2 c milk shopping list
- 3 tsp baking powder shopping list
- 5 egg whites beaten stiff shopping list
- Filling shopping list
- 1/2 c sugar shopping list
- 1/8 tsp salt shopping list
- 1/2 c water shopping list
- 1 tbsp butter shopping list
- 2 tbsp cornstarch shopping list
- 1/3 c lemon juice shopping list
- 2 tsp lemon zest shopping list
- 1 egg, slightly beaten shopping list
- coconut frosting shopping list
- 1 1/2 c sugar shopping list
- 2 egg whites shopping list
- 1/4 tsp salt shopping list
- 1 can coconut shopping list
- 1/3 c water shopping list
- 1/4 tsp cream of tarter shopping list
- 1 tsp vanilla shopping list
How to make it
- Cake
- Combine all ingredients except egg whites in large bowl and mix with electric mixer on medium speed 3 minutes until well mixed
- Gently fold in egg whites until thoroughly blended
- Pour into 3 greased and floured 9 in cake pans
- Bake at 350F for approximately 25 minutes
- Cool in pan on wire rack for 5 minutes then turn out of pans and cool thoroughly
- Filling
- Combine sugar cornstarch and salt in top of double boiler
- Add lemon juice, zest, water egg and butter, mix well
- Place over rapidly boiling water and cook, stirring constantly until mixture thickens (about 5 minutes)
- Cool thoroughly in refrigerator
- Frosting
- Combine sugar, water, egg whites, cream of tarter and salt in top of double boiler .
- Beat with portable electric mixer until blended
- Place over rapidly boiling water.
- Beat constantly with mixer 7-10 minutes until frosting holds a peak
- Remove from heat, add vanilla and continue beating until frosting is cool and of spreading consistency
- Spread over top and sides of cake and sprinkle with coconut
- Note
- Put a layer of lemon curd then a thin layer of frosting and lightly sprinkle with coconut between layers
- You may need to insert thin wooden skewers between layers, this is a tall cake
