Ingredients
  • 2 Tbsp butter
  • 1 Tbsp all-purpose flour
  • Juice of 1 lemon
  • Dash of cayenne or paprika
  • Dash of onion powder (optional)
  • Dash of salt
  • 2 egg yolks, beaten
  • 1/2 cup hot water

Directions
  1. In top of double boiler (water should be simmering) melt butter
  2. Add flour and mix well
  3. Add enough hot water to make a fairly thick sauce, blending and stirring until smooth
  4. Add lemon juice, salt, cayenne and onion powder
  5. Add egg yolks and stir until sauce is smooth and thick
  6. You can keep the sauce in the double boiler for up to 30 minutes before serving
  7. You may reheat before serving, adding a little water if the sauce is too thick
