How to make it

  • In top of double boiler (water should be simmering) melt butter
  • Add flour and mix well
  • Add enough hot water to make a fairly thick sauce, blending and stirring until smooth
  • Add lemon juice, salt, cayenne and onion powder
  • Add egg yolks and stir until sauce is smooth and thick
  • You can keep the sauce in the double boiler for up to 30 minutes before serving
  • You may reheat before serving, adding a little water if the sauce is too thick
