Hollandaise Sauce

- 2 Tbsp butter shopping list
- 1 Tbsp all-purpose flour shopping list
- juice of 1 lemon shopping list
- Dash of cayenne or paprika shopping list
- Dash of onion powder (optional) shopping list
- Dash of salt shopping list
- 2 egg yolks, beaten shopping list
- 1/2 cup hot water shopping list
How to make it
- In top of double boiler (water should be simmering) melt butter
- Add flour and mix well
- Add enough hot water to make a fairly thick sauce, blending and stirring until smooth
- Add lemon juice, salt, cayenne and onion powder
- Add egg yolks and stir until sauce is smooth and thick
- You can keep the sauce in the double boiler for up to 30 minutes before serving
- You may reheat before serving, adding a little water if the sauce is too thick
