Blueberry Coffee Cake with Coconut Topping

- 2 1/3 cups flour shopping list
- 1 1/2 sticks butter, room temp. shopping list
- 1 cup flaked coconut, sweetened shopping list
- 1/2 cup light brown sugar, packed shopping list
- 1 tsp. cinnamon shopping list
- 2 1/2 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 1 cup sugar shopping list
- 2 eggs shopping list
- 1 cup milk shopping list
- 2 1/2 cups blueberries (or 12 oz. frozen unthawed) shopping list
How to make it
- Preheat oven to 375
- Topping
- Combine 1/3 cup flour, 1/2 stick butter, coconut, brown sugar, and cinnamon in bowl and mix until crumbly
- Set aside
- Cake
- Butter and flour 13x9x2 baking pan
- Sift 2 cups flour, baking powder, and salt into bowl
- Beat 1 stick butter with hand mixer until fluffy
- Gradually add sugar until well blended
- Add eggs, one at a time
- Mix dry ingredients into mixture, alternating with milkin 3 additions each
- Fold in blueberries
- Pour batter into baking pan
- Sprinkle topping evenly over batter
- Bake for 40 minutes
