If you love Nanaimo bars, you will absolutely die for these. They are decadent and I know people who will walk over broken glass for one.

Ingredients
  • First Layer (the bottom layer)
  • ½ cup unsalted butter (European Style cultured)
  • 1/4 cup sugar
  • 5 Tbsp cocoa
  • 1 egg, beaten
  • 1 3/4 graham wafer crumbs
  • ½ cup finely chopped almonds
  • 1 cup coconut
  • Second Layer (the middle one)
  • ½ cup unsalted butter
  • 2 Tbsp and 2 tsp cream
  • 2 Tbsp vanilla custard powder
  • 2 cups icing sugar
  • Third Layer (the top one)
  • 4 squares semi-sweet chocolate (1 ounce each)
  • I use 2/3 cup semi-sweet chocolate chips instead of the chocolate squares.
  • 2 Tbsp unsalted butter

Directions
  1. First Layer:
  2. Melt first 3 ingredients in top of a double boiler.
  3. Add egg and stir to cook and thicken.
  4. Remove from heat.
  5. Stir in crumbs, coconut and nuts.
  6. Press firmly into an ungreased 8"x8" pan
  7. Second Layer:
  8. Cream butter, cream, custard powder and icing sugar together well.
  9. Beat until light.
  10. Spread over bottom layer.
  11. Third Layer:
  12. Melt chocolate and butter over low heat.
  13. Cool.
  14. When cool, but still liquid, pour over second layer and chill in refrigerator.
