Lemony Cheesecake Squares Recipe

Ingredients

2 C. vanilla wafer crumbs

1/4 C. sugar

1/2 C. butter melted

3 (8 oz) pkg. cream cheese softened

1 (14 oz) can Eagle Brand Sweetened Condensed Milk (not evaporated milk)

3 eggs

1/2 C. lemon juice

3/4 C. strawberry preserves

Directions

Preheat oven to 375.

Combine crumbs, sugar and butter; press firmly on bottom of 9x13 pan. Bake 8 minutes. Cool.

Reduce oven temperature to 300.

In large mixing bowl, beat cheese until fluffy. Gradually beat in condensed milk until smooth. Add eggs and lemon juice; mix well. Spread preserves evenly over prepared crust. Pour cheese mixture over preserves. Bake 45-50 minutes or until center is set. Cool. Chill. Refrigerate leftovers
