Volcano Potatoe Bake Recipe

Ingredients

8 cps cold mashed potatoes

3 eggs well beaten

3 tbs melted butter

1 cp sharp cheddar cheese

1/4 tsp tabasco

Directions

Make mashed potatoes ahead of time and set aside til cold (can be made the day before.

Mound mashed potatoes on a greased baking sheet

form a mountain type shape and scoop a nice well in the center

mix cheese, eggs and butter and tabasco

Spoon into crater

Bake in a 450 degree oven about 15 to 20 minutes or until potatoes have browned and filling has erupted and runs down the sides.Kids love this and so do big kids

Hi River.Sounds delicious-I will have to try these...but I have to laugh when you say to shape the mashed potatoes into a mountain shape.It reminds of the scene from Close Encounters when Richard Dreyfuss was playing with his mashed potatoes! too funny!
