How to make it

  • Season chicken with garlic salt and pepper.
  • Spray large skillet with cooking spray
  • Place chicken, skin side down in skillet and brown on medium-high heat about 7 minutes on each side or until golden brown
  • Remove chicken from skillet
  • Pour rice into skillet
  • Brown rice in chicken fat over medium heat stirring constantly
  • Add tomatoes and chicken broth and blend well
  • Place chicken on top of rice and bring to a boil
  • Reduce heat and simmer for 20 minutes or until rice is tender and chicken is no longer pink
  • Remove chicken from skillet and keep warm
  • Drop beans by tablespoon into rice; sprinkle with cheese
  • Heat an additional 5 minutes or unittl breans are hot and cheese has melted.
  • Serve with chicken
