Arroz Con Pollo Y Frijoles

- 1 pkg chicken thighs (about 2 1/2 lbs) shopping list
- 2 tsp garlic salt shopping list
- 1 tsp black pepper shopping list
- Pam cooking spray shopping list
- 1 cup long grain rice shopping list
- 2 can (10 oz) Rotel tomatoes (undrained) shopping list
- 1 can (14.5 oz) chicken broth shopping list
- 1 can (16 oz) refreid beans shopping list
- 1/2 cup shredded monterey jack cheese shopping list
How to make it
- Season chicken with garlic salt and pepper.
- Spray large skillet with cooking spray
- Place chicken, skin side down in skillet and brown on medium-high heat about 7 minutes on each side or until golden brown
- Remove chicken from skillet
- Pour rice into skillet
- Brown rice in chicken fat over medium heat stirring constantly
- Add tomatoes and chicken broth and blend well
- Place chicken on top of rice and bring to a boil
- Reduce heat and simmer for 20 minutes or until rice is tender and chicken is no longer pink
- Remove chicken from skillet and keep warm
- Drop beans by tablespoon into rice; sprinkle with cheese
- Heat an additional 5 minutes or unittl breans are hot and cheese has melted.
- Serve with chicken
