Arroz Con Pollo Y Frijoles Recipe
Got this from a Rosarita Refried Beans can, but really liked it. It calls for chicken thighs, but I used boneless skinless breasts.

Ingredients
  • 1 pkg chicken thighs (about 2 1/2 lbs)
  • 2 tsp garlic salt
  • 1 tsp black pepper
  • Pam cooking spray
  • 1 cup long grain rice
  • 2 can (10 oz) rotel tomatoes (undrained)
  • 1 can (14.5 oz) chicken broth
  • 1 can (16 oz) refreid beans
  • 1/2 cup shredded Monterey Jack cheese

Directions
  1. Season chicken with garlic salt and pepper.
  2. Spray large skillet with cooking spray
  3. Place chicken, skin side down in skillet and brown on medium-high heat about 7 minutes on each side or until golden brown
  4. Remove chicken from skillet
  5. Pour rice into skillet
  6. Brown rice in chicken fat over medium heat stirring constantly
  7. Add tomatoes and chicken broth and blend well
  8. Place chicken on top of rice and bring to a boil
  9. Reduce heat and simmer for 20 minutes or until rice is tender and chicken is no longer pink
  10. Remove chicken from skillet and keep warm
  11. Drop beans by tablespoon into rice; sprinkle with cheese
  12. Heat an additional 5 minutes or unittl breans are hot and cheese has melted.
  13. Serve with chicken
