Ingredients

How to make it

  • Combine the 6 dressing ingredients and stir to dissolve the sugar.
  • Add remaining dressing ingredients and mix well.
  • Chill dressing.
  • Combine the ham, turkey, chesse and pickles together in large bowl.
  • Toss together with the dressing.
  • Divide lettuce among chilled plates, top with salad.
  • Garnish with pimento olives (optional)
  • Serve with Popovers and honey butter.
  • Delish...........

    I remember having Maurice salad as a kid the year we lived in Pittsburg in 1952 or 53. The restaurant was on the first floor of a hotel in downtown Pittsburg. As an 8-year, I wasn't big on salads but this tasted good and had meats and cheese. For some reason the name Maurice popped into my head and little searching brought me here. Can't wait to make it. Much thanks to the many posts.

    I really look forward to making this! I used to have it at Higbee's Department Store in the Cleveland, Ohio area. Also have had it at a restaurant in Northville Michigan. Haven't seen it since.

    I've had this bookmarked since it was posted and finally got around to it today. I got nearly done and realized I had no ham! Luckily, I found some salami in my refrigerator so I subbed that for the ham. I had this for lunch, but it would make a great dinner. I really like this a lot. I didn't have onion juice and didn't want to juice an onion so I just mashed up some onion and used that instead. I used romaine instead of iceberg as I had some I needed to use up, Added a picture, too, and a thread in IMI.

    My neighbor was the chef who "invented" this salad and dressing. She was a chef at Hundson's. I have VERY, VERY fond memories of spending my Saturdays at Hudson's. They had great blueberry muffins too. The mezzanine restaurant was awesome. And we went to see Santa there every year. They also had a kid's shopping area each Christmas so kids could buy their family gifts without parents. I cried when the building was imploded.

    Ok, when I was a little girl, my Mom used to take me to the Hudson's Downtown (I really miss it, don't you? Macy's doesn't compare for me!) and we'd get Maurice Salad! Wonderful!!! Talk about a walk down Memory Lane! This is one great salad! (My husband has fond Maurice Salad @ Hudson's memories, too! Think I'll make us some!)

    Oh, now I remember the chopped salad in Cincinnati that was close to this and it was yummy. As well as the Hot Brown...my favorite part of visiting while Dad was with the Red's. Shillito's and Pogues department stores where all the ladies lunched. YUM.
