Ingredients

How to make it

  • Pour the syrup and lime juice into the bottom of a 12 oz glass.
  • Fill the glass 2/3 full with ice.
  • Top with sparkling water, stir, and enjoy.

  • blanch 1 1/2 cups of basil leaves by plunging them into boiling water for 10 seconds.
  • Remove the leaves and plunge them into ice water to stop the cooking process.
  • Drain and squeeze the water from the leaves.
  • Puree the blanched basil in a blender with 1/2 cup of sugar, 1/2 cup of water and 1/8 teaspoon of bicarbonate of soda/baking soda(preserves the green colour of the herb) for 30 seconds.
  • Strain this puree into a storage container, using the back of a spoon to help push it through the strainer mesh.
  • Store tightly sealed in the refrigerator.
  • This keeps for 3 days and makes 3/4 of a cup.
  • IF you garden...try substituting a different variety of basil.

    I never even knew there were different types of basil! I have learned something. This sounds intriguing and refreshing. Let us know how the lemon-thyme one comes out -- that is one of my favorite combinations.

    You should...this came about from an experiment growing a basil I had never grown before. Now I'm curious what other basils will taste like. Currently I have a bush variety called 'Spicy globe basil"...and now because my mind rarely shuts off...I have to wonder what a fresh lemon and simple syrup made with lemon thyme would taste like....Mmmm

    This sounds beautiful - can't wait to try this. I've been threatening to grow some basil for some time as I use so much of it and this may be the extra inspiration I need.

    I would -never- have thought to add basil to something like this. I've used cinnamon basil as tea, but never anything like this as a chilled drink. Can't wait to try this (but might have to until things thaw here and my basil starts growing again ... ~laughs~)
