Banana Cake With Secret Icing Recipe

Ingredients

2 1/2 cups flour

1 1/2 cups sugar

1 1/2 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 cup margarine

1 cup mashed banana

2/3 cup buttermilk or sour milk (to sour milk stir in about 1/2 to 3/4 tbsp vinegar and let sit for a few minutes)

2 eggs

1 tsp vanilla

Secret Icing

1/4 cup butter

1/2 cup brown sugar

2 tbsp milk

1 cup icing sugar

Directions

For cake

Grease and lightly flour 9 x 13 pan.

Combine first 5 ingredients in large mixing bowl.

Add margarine and banana.

Beat on low until combined.

Add buttermilk, eggs, and vanilla.

Beat 2 minutes on medium.

Pour batter into pan.

Bake at 350 F for 30 minutes or until done.

Cool 10 minutes before removing from pan.

Cool thoroughly before icing.

For Secret Icing

I usually make 1 1/2 batches for the cake. Again, make sure cake is completely cooled before icing.

Melt butter.

Stir in brown sugar.

Cook over low heat for a few minutes until bubbling, stirring constantly.

Add milk, and stir bubbles down.

Remove from heat, and stir in icing sugar.

Pour over cake and spread quickly.

Let icing cool and enjoy!

This sounds delish, think this is the icing recipe I lost years ago. Great post, you got my five, and remember the best banana cake is made with overly ripe banana's - the one's you wouldn't eat any longer.
