Chicken with Cucumbers in Paprika Sauce

- 2 cucumbers, peeled and cut into ¼” slices shopping list
- 4 whole boneless chicken breasts, cut into strips shopping list
- 2 T. paprika, divided shopping list
- 1/4 C. butter shopping list
- 1/4 C. oil shopping list
- 1 onion, finely diced shopping list
- 4 oz white wine shopping list
- 1 pt heavy cream shopping list
- salt shopping list
- pepper shopping list
- lemon juice shopping list
- Worcestershire sauce shopping list
How to make it
- Blanch cucumbers in boiling, salted water. Remove and refresh cucumbers in cold water.
- Season chicken strips with salt and 1 tsp paprika.
- Melt butter in skillet. Add oil. Allow to start browning and add diced onion. Stir. Add chicken and brown on all sides. Remove chicken from skillet and keep warm.
- Add paprika to skillet and cook for 2 min over med heat. Add white wine and reduce by half. Add cream and reduce until thick. Season with salt, pepper, lemon juice and Worcestershire sauce to taste. Add chicken and cucumbers. Serve immediately.
