A favorite at my house, especially when you're waiting on your next paycheck, and can't go grocery shopping. (haha) This recipe traditionally calls for Heavy Cream, but for simplicity's sake, I am omitting that.

Ingredients
  • 4 ounces of Bacon (Preferably Pancetta if you have it. Regular Bacon will Do)
  • One 16 oz. package of Thin Spaghetti or Vermicelli (Angel Hair) Pasta
  • 3 cloves of Garlic (minced or finely chopped)
  • 1/2 of a Medium Onion finely diced
  • 2 eggs (beaten)
  • Salt and Pepper to Taste.

Directions
  1. Chop the bacon into small bite size pieces.
  2. Cook the bacon in a skillet (the bacon grease should be enough oil. If you need more oil, use Extra Virgin Olive Oil)
  3. Add the Diced Onion and the Garlic to the Bacon.
  4. Boil the Pasta.
  5. In a small mixing bowl, beat the eggs.
  6. Once Pasta is cooked, Drain.
  7. Immediately after the pasta is drained, toss with the two eggs, and Bacon Mixture. (The Hot Pasta and Hot Grease from the Bacon will cook the eggs.)
  8. Serve immediately.
