My Lomaglio Pasta Salad Recipe

A delicious Italian dish I've been cooking for a very long time. A dish I know everyone enjoys every time I cook it. Try it, you might like it too!

Ingredients
  • 2 Pounds Spiral tri-color pasta (not noodles)
  • (or 2 boxes 12 oz same as above)
  • 1-Large jar roasted red peppper
  • 1-Medium can sliced black olives
  • 1-Medium jar green olives with pimentos
  • 1-or 2-Jars marinated artichoke hearts
  • (Can add Pepperoni - your choice)
  • 1/4-Cup onion (sweet)
  • 3-tsp Chopped Garlic
  • (Can add 1 can/jar marinated mushrooms - your choice)
  • Cheese: Feta, Provolone, Mozzarella (amount your choice)
  • or....you can use any cheese of your own choosing)
  • 1-1/2 Bottle Italian dressing (Kens) or your choice
  • (Note: Also tastes good with Cesear Dressing)

Directions
  1. Boil large pot of water adding some olive oil and salt
  2. Add past - cook on medium heat only until pasta is soft NOT mushy
  3. Remove from pot and drain
  4. Pour cold water over pasta and drain again
  5. Set aside until Past cools down
  6. After Pasta is totally cooled add all the other ingredients
  7. Make sure to cut everything up very small (not shredded)
  8. Add garlic and onion
  9. Add cheese last (also cut up small or can be shredded-your choice)
  10. Add salad dressing and toss entire salad
  11. After tossing sprinkle some parmesign cheese on top
  12. Refrigerate at least 3 hours to allow the flavors to set.
  13. Serve: As a side dish, on a picnic, to a church group, sports event or whenever you think this dish might go!

This is my kind of pasta salad too. (I like to add hard Italian Salami!) Yumm!

When I was a child, we called pasta salad "macaroni salad"....Ha! Love artichokes and red peppers...am always hunting for a great bottled salad dressing.


This sounds wonderful! It is very similar to a salad I make with tortellini.
