How to make it

  • Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
  • In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, Craisins, onions and celery.
  • Chill for 30 minutes.
  • Serve with tomato and lettuce.

    Oh wow, Marky - this looks delicious. I'm saving this to try. I have friends coming in for a stay in less than two weeks and I think your chicken salad might be good to have on hand for some stellar sammies. Thanks so much - great post! I'll let you know when I make it...
