Two Crust Pineapple Pie Recipe

Ingredients

1 (15 1/4oz) Can Crushed pineapple

3/4 Cup Sugar

2&1/2 Tablespoon Cornstarch

3 Tablespoons Butter

2 Tablespoons Fresh Lemon Juice

2 teaspoon Lemon Rind

Directions

Make you Pie Crust:

Note: I have a few Pie Crust recipes on my site

Drain Pineapple,reserving 1/2 cup pineapple juice

Combine sugar and cornstarch in a saucepan,stir well

Add reserve pineapple juice

Cook over Medium heat,stirring constantly,until thickened

Remove from heat

Add Pineapple,butter,lemon juice and rind

Stir until butter melts

Pour into pastry-lined pie plate

Cover with top crust

Slit in several places to allow steam to escape(or) use a Pie Bird

Seal and flute edges

Bake at 425 degree oven for 20 to 30 minutes
