How to make it

  • Make you Pie Crust:
  • Note: I have a few Pie Crust recipes on my site
  • Drain Pineapple,reserving 1/2 cup pineapple juice
  • Combine sugar and cornstarch in a saucepan,stir well
  • Add reserve pineapple juice
  • Cook over Medium heat,stirring constantly,until thickened
  • Remove from heat
  • Add Pineapple,butter,lemon juice and rind
  • Stir until butter melts
  • Pour into pastry-lined pie plate
  • Cover with top crust
  • Slit in several places to allow steam to escape(or) use a Pie Bird
  • Seal and flute edges
  • Bake at 425 degree oven for 20 to 30 minutes

    Sounds great! I use bought crust too, just don't have a good touch with crusts, they always turned out tough so I quit making them.
