Two Crust Pineapple Pie

- 1 (15 1/4oz) Can crushed pineapple shopping list
- 3/4 Cup sugar shopping list
- 2&1/2 Tablespoon cornstarch shopping list
- 3 Tablespoons butter shopping list
- 2 Tablespoons Fresh lemon juice shopping list
- 2 teaspoon lemon rind shopping list
How to make it
- Make you Pie Crust:
- Note: I have a few Pie Crust recipes on my site
- Drain Pineapple,reserving 1/2 cup pineapple juice
- Combine sugar and cornstarch in a saucepan,stir well
- Add reserve pineapple juice
- Cook over Medium heat,stirring constantly,until thickened
- Remove from heat
- Add Pineapple,butter,lemon juice and rind
- Stir until butter melts
- Pour into pastry-lined pie plate
- Cover with top crust
- Slit in several places to allow steam to escape(or) use a Pie Bird
- Seal and flute edges
- Bake at 425 degree oven for 20 to 30 minutes
