Fried Green Tomaatoes with Shrimp Cream

- 4 green tomatoes, sliced 1/4 inch thick shopping list
- 1 quart buttermilk shopping list
- 4 cups cornmeal shopping list
- 1/4 onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 4 tbs butter shopping list
- 4 tbs flour shopping list
- 3 cups heavy cream shopping list
- 1 lb shrimp or crawsfish tails shopping list
- 1 tsp louisiana hot sauce shopping list
- 1 tsp worcestershire sauce shopping list
- salt and pepper shopping list
How to make it
- Soak sliced tomatoes in buttermilk overnight
- Heat oil to 350. Take tomatoes out of butermilk and dredge in cornmeal. Fry in deep fryer until golden brown. Place tomatoes on plate and pour sauce over them.
- Sauce
- Wilt onion and garlic in butter, but do not brown. Whisk in flour and cook 5 minutes, continuosly stirring. Do not burn. Once roux is cooked, stir in cream with a whisk. Sauce should be smooth and creamy. whisk until it is. Add crawfish tails or shrimp and cook until shrimp turn pink, which will only be a few minutes. Crawfish are packaged precooked,.so only need to get hot. Season with salt, pepper, hot sauce and Worcestershire sauce.

The seafood sauce was awesome over grits. Next time, I'll do the tomatoes.
