How to make it

  • Soak sliced tomatoes in buttermilk overnight
  • Heat oil to 350. Take tomatoes out of butermilk and dredge in cornmeal. Fry in deep fryer until golden brown. Place tomatoes on plate and pour sauce over them.
  • Sauce
  • Wilt onion and garlic in butter, but do not brown. Whisk in flour and cook 5 minutes, continuosly stirring. Do not burn. Once roux is cooked, stir in cream with a whisk. Sauce should be smooth and creamy. whisk until it is. Add crawfish tails or shrimp and cook until shrimp turn pink, which will only be a few minutes. Crawfish are packaged precooked,.so only need to get hot. Season with salt, pepper, hot sauce and Worcestershire sauce.

    Oh my goodness, my beloved Fried Green Tomatoes made even MORE decadent with a seafood sauce...I will definitely be making this one as soon as the green tomatoes show up at our farmers market!!
