JEBs Famous Spicy Biscuits Recipe
This recipe was a finalist in a New Orleans Times-Picayune cooking contest a number of years ago. I developed it to go with a pork loin roast, but it goes well with a lot of things

Ingredients
  • 1 cuup all-purpose flour
  • 1 cup seasoned fish fry
  • 3 tbs shortening
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 cup sour cream (not reduced fat or fat free)

Directions
  1. Combine fish fry, flour, baking powder and baking soda.
  2. Cut in shortening
  3. Add sour cream
  4. stir gently until mixture forms soft dough.
  5. Turn out on floured surface and knead VERY lightly to make dough smooth. You do not want to develop the gulten in the flour.
  6. Gently pat out dough to 1/2 inch thickness and cut into rounds or squares
  7. Bake on ungreased sheet pan at 425 for about 15 minutes or until lightly browned
  8. Makes 10-12 biscuits.

This may seem like a silly question but I've never heard of fish fry. What is it?

Fish fry is packaged by a number of companies. Zatarains is one. Tony Chachere's and Louisiana Fish Fry are others. It is really just seasoned corn flour used to roll fish in before frying.
