Ingredients
  • 2 Large Tortillas
  • 1 Bunch Scallions Diced
  • 1 Medium bell Pepper Diced (Red or Yellow)
  • 1/4 lb Sliced Mushrooms
  • 1/2 Cup Sour Cream
  • grated cheese (optional)
  • 3 Eggs

Directions
  1. Add the scallions, green pepper, and mushrooms and saute in a greased pan
  2. add eggs .
  3. Stir the contents of the pan to mix as it cooks.
  4. Add the mixture to tortillas and top with sour cream.
  5. enoy
