Ingredients
  • 2 pounds pork tenderloin cubed
  • 1/2 cup coconut milk
  • 3/4 cup hot water
  • 1 beef or chicken stock cube
  • 1 soy sauce
  • 1 clove garlic
  • 1 ginger
  • 1 chili
  • 1-1/2 teaspoons curry powder
  • 2 teaspoons cornstarch
  • 6 teaspoons peanut butter
  • 1 white onion
  • 1/2 bunch celery chopped

Directions
  1. Mix all ingredients except stock, meat, vegetables and cornstarch together in a measuring cup.
  2. Cook onion and pork until done in wok on high heat.
  3. Remove from heat and add sauce.
  4. Blend cornstarch in 1 tablespoon cold water and add to mix.
  5. Return to heat and add vegetables.
  6. Cook until sauce thickens.
