Ingredients

How to make it

  • Spray muffin tin and drape each salami slice over a muffin hole
  • Crack an egg in each
  • Sprinkle pepper, parsley & Tabasco
  • Put in 325ish degree toaster oven
  • Go have a shower
  • Take out of oven- egg white will be all cooked and yolk will be half hard/half runny- just the way I like 'em.

    This was pretty neat! I used a pyrex cup (not sure why there are two pictures!) and my toaster oven. The oven was set in between 325 and 350. I used three pieces of coppa salami. I didn't have parsley handy so I used Italian seasoning, black pepper and I also sprinkled a little bit of cheese on top. At 12 minutes I realized I wanted an English muffin half to put it on so it was in for a total of 15 minutes which was probably a bit too long as the yolk was almost set. I really liked this and I will definitely make it again. Added my pictures and a thread in IMI 6/22/13.

    Yum! I've been making mini crustless quiches in muffin tins for my son but he loves salami and runny eggs. I can't wait to make these for him.
