Funny Little Muffin Tin Baked Egg Thingies
I really liked these and I love being able to use my toaster oven in the mornings instead of my regular one. I'll be making these again. A lot more on the recipe.

I don't know about running off and taking a shower during these....but they do sound good! The English muffin was a good idea....to soak up the yolk! :) I see I saved this at some point so can't wait to eat it!

I love my toaster oven and seldom use my regular oven. I have some pepperoni to use up so maybe I'll try these. Beautiful pics--as usual.

This just looked fun so went and grabbed the ingredients so I can try this out tomorrow. I bought Capicola, which I think I'd prefer.... a hammy meat :),over a spicy salami for brekkie anyway. :) Thanks for pointing this out Frankieanne. Always nice to change things up a bit!
    Lovely picture.

    Thank you, ladies!
I kinda like these for weekday morning breakfast. I can just put one in the toaster oven while I get ready for work. I think I'll get some prosciutto for next week. Or look for some Capicola, too! :)

Cooked these up this morning. Had a hard time with the length of cook time though. I cooked one initially for my hubby as he had to head off to work. I have one of those double ovens so put it in the top part at 325F for 12 min. but it was basically raw when it was time to pull it out. Nuked it in the oven for another 30 seconds and over did it a little but not badly.
Put an oven thermometer in the top oven just to make sure the temp was right and if anything it was running a bit high. Tried again with two more but again the time just wasn't long enough and I finished them off in the microwave.
The flavour was nice though. The Capicola has a spicy heat to it too which was nice. It was fun to try. I'll just have to cook it longer next time.

I've tried to bake eggs in a regular oven without much success. It seems to take so long that its hardly worth it. I guess the toaster oven keeps the heat closer to the egg? I don't really know. I'm glad you kinda got these to work, Chuckie.
I tried one of these this morning with two pieces of very thinly sliced pancetta and it was really good! I think I like the pancetta better than the salami.
