Plain Old Homemade Chicken Noodle Soup Recipe
This is a no frills, basic chicken noodle soup that omits the wild and ugly. It is simply classic comfort food. We served this at one of our restaurants and it was a killer.

Ingredients
  • 3 chicken leg quarters, skinned
  • 1 large onion, chopped
  • 3 ribs celery, chopped
  • 1 bay leaf
  • 1 tsp garlic,. minced
  • 2 1/2 qts water
  • 3 or 4 cups wide curly noodles
  • 3 tbs cornstarch
  • 1 can evaporated milk
  • salt and pepper to taste

Directions
  1. Place chicken in pot and simmer until tender. Remove and ebone and chop
  2. Place stock in food processer and blend until smooth.
  3. Combine chicken and stock
  4. Return to boil and add 3 or 4 cups noodles Simmer until noodles are barely tender.(They will cook another 3 - 5 minutesi n next step)
  5. Check and adjust seasonings.
  6. Stir 3 tbs cornstarch disolved in 1/3 cup cold water into soup. Simmer another 3 to 5 minutes.
  7. Stir in 1 can evaporated milk
  8. Adjust seasonings.

I make delicious home-made chicken noodle soup quite often. I never thought of adding evaporated milk. I'm excited about trying it! Sounds like it would taste like cream of chicken soup. Yum!!
