How to make it

  • Combine Oil, eggs, pumpkin and Coconut Milk
  • Mix Well
  • Add Spices, Salt, Baking Soda, Baking Powder, Flour, and Sugars.
  • Mix for 7 min.
  • Bake at 350' in greased and floured bread pans for 50 to 60 min. Or until knife comes out clean and bread springs back to touch.

    This bread was super delicious! The spices in it blend beautifully with the pumpkin....The coconut milk gives the bread a nice moistness...A large can of pumpkin works to double this recipe & it is a good thing or there wouldn't have been any for me to taste!! Excellent recipe!!
