Ravioli With Spinach Chicken And Ricotta Recipe

Ingredients
  • Fresh pasta sheets, either homemade or bought, for ravioli dough.
  • 1 package frozen spinach, thawed and wrung out dry
  • 1/2 tsp. fresh lemon zest
  • 1/2 lb. ricotta cheese
  • 1 egg
  • 1 clove garlic, minced.
  • 1/2 cup or more romano cheese
  • salt, pepper, to taste.
  • 1 cup ground up chicken (save from leftovers, or use one of the store bought rotisseries...very simple this way)
  • dash of cayenne pepper sauce

Directions
  1. Have your pasta sheets ready and off to the side. Make sure you have a lightly floured surface to lay the ravioli out in single layers after you press them.
  2. In a bowl, beat ricotta cheese, egg and romano til fluffy.
  3. Mix in spinach , lemon zest , salt and pepper.
  4. Fold in the chicken and add a dash of the cayenne pepper sauce.
  5. Place a spoonful ( I use a 1 inch ice cream scoop) of filling on dough. Cover with another piece of dough and press with a ravioli cutter, cup, whatever you choose to shape your raviolis. Make sure edges are sealed.
  6. **Note. I find that laying out a long strip of dough and placing drops of filling across and then covering with another piece of dough and then cutting the ravioli makes for quick work in the kitchen.
  7. Lay ravioli out in single layers to dry a bit while you clean up and bring your water to a slow boil. At this point you may also freeze for later use. When you are ready, cook for about 6 min. Check at this time and continue to boil if dough is still tough.
  8. Top with your favorite sauce, or like me, some EVOO and fresh Romano.
  9. Basic Pasta dough recipes can be found anywhere, and it's really worth giving it a try if you haven't yet. Pasta machines are also inexpensive, you can pick one up for $30, and may find you have a new love for making homemade pasta. Scraps from my ravioli are run thru the spaghetti setting for my kids to eat later.
